Green beans with toasted pecans and a fresh clementine and basil dressing

This really simple side dish enhances the natural crunchy beans with a light and zesty dressing and earthy toasted pecans. Perfect with a roasted free range chicken.

 

You will need:

1 small shallot, chopped

1 1/2 teaspoon Dijon mustard

1/4 teaspoon sea salt

Zest and juice of 3 clementines

30 g fresh basil

600g green beans

1/2 cup pecans, toasted and chopped

In a blender, combine shallot, mustard, salt and clementine juice and fresh basil and blend until smooth. Set aside. Steam beans until bright green and barely tender, about 4-6 minutes. Transfer to a large bowl and drizzle with citrus dressing. Sprinkle with pecans and clementine zest to taste and serve.
