Blueberry, Banana and Coconut Loaf

Our gluten, grain and refined sugar free blueberry, banana and coconut loaf.

This is the most simple recipe for a delicious, moist loaf using just 7 ingredients. The fresh blueberries give a lovely natural sweetness and antioxidant boost while the ground almonds are rich in protein and monounsaturated fats.

The recipe can easily be made dairy free by substituting butter for coconut oil, and vegan by using 2 tablespoons of ground flaxseeds instead of eggs.

2 ripe bananas
2 eggs
1/2 tsp gluten free baking powder
150g ground almonds
75g melted butter or coconut oil if you are dairy free
50g desiccated coconut
125g fresh blueberries

Preheat over to 150 degrees Celsius.
Melt butter or coconut oil in a saucepan. Blend all ingredients apart from blueberries until smooth. Stir in melted butter once cool and fold in blueberries.
Line a loaf tin and bake for 45 minutes (checking at 30 minutes) until golden and firm to touch.
